
Formerly Known as Twineham Grange Vegetarian Parmesan and currently 'Not Just a Pasta Cheese'

This Medium Fat Hard Cheese, is made from unpasteurised milk, but unlike Italian Parmesan, is suitable for Vegetarians. We use a Vegetarian Rennet to coagulate the milk, Italian Parmesan is made using an animal rennet. The milk is higher in Protein and Butterfat, resulting in a cheese that is sweeter and more pallatable than one would expect. When it is first opened, shave it with a potato peeler or Parmesan shaver and eat with an apple or pear, lovely with a glass of wine. A great source of zinc, calcium and protein and stores for five months from opening. So don't just grate it over your pasta, proudly display it on your cheeseboard!
This cheese does not have to be opened for at least 2 months and then will last 5 months from date of opening. Once opened, wrap in greaseproof paper, place in an airtight container in the fridge.
It can also be Frozen! Fed up throwing away mouldy cheese? Simply place this in the freezer, take it out when needed, grate whilst frozen and then put it back in the freezer.
We had been making this Medium Fat Italian Style Hard Cheese at Twineham Grange for fifteen years, employing the same traditional methods as the Italians, simply using English milk instead, which is higher in protein and butterfat. Our Medium Fat Italian Style Hard Cheese is one that many a celebrity chef has deemed to be sweeter and more palatable than the real thing. In fact, in a blind tasting featured in Restaurant Magazine, a panel of judges were seriously hard-pushed to tell the difference. BBC 2’s “FULL ON FOOD” programme even rated it in their top five British Table Cheeses, so don't just grate it over your pasta (our pasta of course) proudly display it on your cheeseboard.
In early 2008 following the demise of our Italian landlords business in Italy, we reluctantly had to move out of Twineham Grange. We are currently in the process of setting up a new creamery, but this is taking slightly longer than planned due to the current economic climate. So in the meantime we are having our cheese made in Italy in the same manner in which we made ours. The reason we have done this is two fold, firstly it keeps the brand alive and our thousands of customers happy and this loyalty will help us get the funding from the banks which we need to help fund our production again.
Please note we are currently re-branding our cheese and it will now be called Vegetarian Pasta Cheese, unfortunately the branding 'Not Just a Pasta Cheese' did not work, firstly the packaging was quite dark, secondly the cheese was not visable through the pack and finally, the title started with a negative. Lots of customers thought if it's not a pasta cheese, what is it?
Each month we will be adding a different serving suggestion to the packaging; ie. Have you tried this cheese with an apple or a pear?, or Have you tried with a glass of wine? The idea is to try and encorouge our customers to use it for more than just grating over their pasta. To this end we are very interested to find out how you enjoy our cheese.
